Chewy granola protein bar

2 cups Quick oats

2 cups of crisped rice cereal(or 2 rice cakes)

dash of salt

1 cup of raisins,cherry, blueberry medley(trader joe’s has a nice mix-put whatever you like in it)

1/4 cup coconut oil(or butter)

3/4 cup light corn syrup

1/4 cup coconut sugar(or brown sugar or sweetener of your choice)

1 teaspoon of vanilla extract

2 scoops of protein powder(I use a pea based protein powder)

 

Put all dry ingredients and the fruit mixture in food processor and chop until it’s all blended.  Set aside.  Heat coconut oil, sugar, and light corn syrup on medium heat until it boils.  Pour in vanilla extract while stirring, then remove from heat and set aside for 4 minutes.  Combine all ingredients together.  Prepare large baking dish with parchment paper folded in and lightly coat with cooking spray.  Pour mixture into pan and using flat spatula press mixture into pan until nice even layer.  Let cool for 2-4 hours and cut into 12 yummy granola bars.  Enjoy!!
